While in my fridge this morning, I realized I had way more blueberries than I could handle and did not want them to go to waste, so I got online to search for something scrumptious to make and boy did I find it! This recipe is courtesy Abbey Cat Chat of and liberally adapted from Cooking Light. I had to try a piece immediately-- if you like cake and blueberries, this is a real treat. I have actually already cut up the whole thing in pieces to give to friends and family or else I would eat the whole cake!
Oh and the only thing I added to the recipe was slivered almonds on top for a nice crunch! See the pics below and if you try it out, enjoy-
